Healthy Breakfast Tacos

These delicious tacos are gluten-free, vegetarian, easy to make and take only 15 minutes to prepare. Members of the Culinary and Lifestyle Medicine Interest Group prepared this recipe during their August session that was led by the group’s co-presidents, John Paul Saway and Olivia Durant. 
4 corn tortillas 
4 eggs 
1 cup black beans, canned 
½ avocado 
1 cup grape tomatoes 
¼ cup fresh cilantro leaves 
Heat the tortillas over medium heat in a pan. Set aside. 
Scramble eggs over medium heat. Once cooked, place in each tortilla. 
Heat black beans and place in tortillas. 
Slice the avocado and tomatoes. Place in tortillas. 
Top with cilantro. 
You also can warm the tortillas in the oven. 
Top with hot sauce or salsa for more spice. 
Kidney beans or refried beans may be used instead of black beans. 
To add veggies, try leftover roasted peppers, zucchini or eggplant. 
If you want to add meat, try leftover roast chicken
